Coupon or gift card: what is the difference?
Short answer: The coupon is only debited if it is used, and you can cancel it beforehand. The gift card is debited straight away, but it can be printed and given.

How to choose
The coupon suits an uncertain spend: an unused code costs nothing. It is also the only option if you want to commit more than your balance of the moment.
The gift card suits handing something over: a reward, a tournament prize, an end-of-season present.
A coupon issued above the balance still has to be paid for: if the money pot does not cover the coupon when it is used, the buyer's order is put on hold until you pay in the amount that is missing.
