How do I hand over the shop without giving access to the money pot?

Short answer: Grant them the Shops role on its own, and leave Owner, Money pot and Promotions unticked.

Steps

Open Admins, then Invite for a new person, or click the row of an administrator already there.
Tick Shops, and leave Owner, Money pot and Promotions unticked.
Click Send invitation, or Save roles for someone already there.

You'll know it worked when: The person carries the Shops chip alone, and sees neither the money pot nor promotions.

Do not tick Owner: that role gives everything, money pot included. There is no such thing as a limited owner.

What the person will still see

The contacts, the tags and the orders: those are the basic functions and cannot be taken away. The money pot amounts, on the other hand, stay invisible to them.
